genuine from Hawaii – a mix of Pina Colada and Strawberry
First, blend the strawberries and a handful of crushed ice in a blender until smooth (it shouldn’t be too runny). Set it aside. Now blend the rum, Malibu, coconut milk, and pineapple juice together with about two handfuls of crushed ice in a blender until smooth. The mixture should have the consistency of a frozen daiquiri. A little more crushed ice may be needed. Now, carefully pour both mixtures ALTERNATELY into a cocktail glass (starting with the light Colada). This creates a swirl pattern that’s reminiscent of the lava flows in Hawaii. Practice makes perfect; I needed half a bottle of Malibu to get it right. I discovered this delicious and light summer cocktail in Hawaii. There are many recipes circulating online, but they always include banana, which definitely wasn’t in any of the numerous lava flow cocktails I’ve had there. Also, unlike many cocktails, this cocktail isn’t made with the sweet cream of coconut, but with coconut milk, so it’s not as sweet. If you want it a bit stronger, you can add a little rum to the strawberry mix.
