Ingredients for 1 servings:

  • 100 g margarine, vegan
  • 60 g sugar
  • ½ tbsp soy flour
  • 2 tbsp water
  • 175 g flour
  • ½ tsp baking powder
  • 2 tbsp lavender (lavender leaves), fresh, chopped
  • 1 tsp lavender (lavender flowers), fresh

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

vegan and lactose-free cookies with soy flour

Mix the soy flour with the water. Mix well with the margarine and sugar using a hand mixer on high speed. Combine the flour and baking powder and add. Knead with your hands until a smooth dough forms. Add the lavender and knead well. Form the dough into a ball and refrigerate for half an hour. Preheat the oven to 200°C (fan). Roll out the dough and cut out hearts or other shapes. Place on a baking sheet lined with baking paper and bake at 200°C (convection oven) for about 10 minutes. This simple amount of dough yields 40 cookies. Each cookie has about 40 kcal.
