Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking powder
  • 50 g ground almonds
  • 150 g cane sugar
  • 1 orange(s), ground peel
  • 1 tbsp lavender, dried
  • 2 eggs
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 100 g almond(s), whole

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Combine the flour, baking powder, ground almonds, cane sugar, ground orange zest, and lavender in a bowl and mix. Beat the eggs with honey and vanilla extract until frothy. Add to the flour mixture and knead into a smooth dough. Knead the whole almonds into the dough. Divide the dough into three equal pieces and shape into rolls approximately 3 cm in diameter. Place on a baking sheet lined with parchment paper, leaving enough space between them to prevent sticking. Bake in a preheated oven at 200°C for 20 minutes. Let cool and cut into pieces about 2 cm thick. The cooled rolls will be firmer and a little harder to cut, but they won’t crumble as easily. Arrange the pieces upright (so the cut surfaces bake evenly) on the parchment-lined baking sheet. Bake in the preheated oven at 200°C for another 15 minutes, until the cantuccini are dry and lightly browned on the sides. Remove from the baking sheet and let cool. The recipe yields about 30 to 40 pieces.
