Layered goat cheese cream

Ingredients for 8 servings:

  • 250 g goat’s cheese
  • 150 ml sweet cream or milk
  • 50 ml olive oil
  • 75 g apricot(s), dried (soft apricots)
  • 75 g prunes
  • 120 g tomatoes, dried in oil
  • Salt and pepper from the mill
  • possibly walnuts

a delicious combination of goat’s cheese, dried apricots and prunes as well as dried tomatoes marinated in oil

First, whisk the goat cheese with the cream or milk and oil until creamy (it tastes better with oil, but it will be leaner if you use only milk for whisking). Cut the dried fruit into small cubes and mix. Blend the tomatoes into a paste in a blender, adding a little more oil if desired. Then layer the cheese cream, tomatoes, cheese cream, fruit, and cheese cream alternately in not-too-large glasses. Serve with grissini, toast, or crackers. If you like, you can sprinkle some finely chopped walnuts on top. This mixture is also highly recommended as a topping for bruschetta.
