Leaf salad with chicken and mandarins

Ingredients for 2 servings:

  • 1 head of lettuce (variety according to taste)
  • 1 pack of cooked chicken breast fillet(s), sliced
  • 1 small can/mandarin orange(s)
  • 100 g cheese, grated
  • 3 tomatoes
  • 1 cup of natural yogurt
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar bianco (or white wine vinegar)
  • 2 tbsp chives, in rolls
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the lettuce, dry it, and tear it into bite-sized pieces. Chop the chicken. (You shouldn’t use wafer-thin slices; they should be more “normal” thick slices.) Drain the mandarin oranges and cut the tomatoes into eighths. Combine all ingredients in a salad bowl and mix. Make a dressing from the yogurt, oil, vinegar, and chives, season with salt and pepper. Pour over the salad and toss to combine. Finally, sprinkle the grated cheese over the finished salad and serve. Instead of the chives, you can also add a spoonful of mandarin orange juice and 1 teaspoon of curry powder to the dressing.
