Leaf spinach casserole with sucuk

Ingredients for 4 servings:

  • 750 g jacket potatoes
  • 1 kg leaf spinach, fresh
  • 1 small can of tomatoes, peeled
  • 2 sausages (Sucuk – Turkish pepperoni sausage)
  • 100 g cheese (Emmental), grated
  • 1 clove(s) garlic
  • 1 tsp salt
  • 1 pinch of pepper
  • some water
  • 1 tsp olive oil for the mold
  • 1 flatbread(s)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the potatoes with their skins on and boil them in their jacket potatoes. Trim and wash the spinach leaves, then wilt them in a pot with a little water. Season with salt and pepper. Dice the sucuk and fry. Peel the garlic and press it in. Grease a baking dish with olive oil. Peel and dice the potatoes. Mix with the spinach leaves and sucuk and add to the baking dish. Arrange the peeled tomatoes on top and sprinkle with the cheese. Bake in a preheated oven at 200°C for about 15 minutes, until the cheese is golden brown. Serve with the flatbread.
