Lebanese cheese flatbreads

Ingredients for 6 servings:

  • 500 g flour
  • 1 yeast
  • 2 pinches of salt
  • Water, lukewarm
  • 500 g cheese, e.g. feta
  • 2 tbsp oil (olive oil)
  • 1 onion(s), chopped
  • pepper
  • 1 pinch of clove(s), ground
  • 1 pinch of ground nutmeg
  • 1 pinch of ground ginger

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Knead the ingredients into a yeast dough, slowly adding water until the dough no longer sticks to your hands. Let it rise in a warm place for 1 hour. Knead again and form into 30 egg-sized balls. Make a paste with the cheese, olive oil, onion, and spices. Do not add salt; the cheese is already quite salty! Form the dough balls into small flatbreads about 10 cm in diameter, pull up the edges slightly, and spread the cheese mixture on top. Place on a greased baking sheet and bake at 200°C for about 10 minutes. The cheese flatbreads are served as part of a “mezze” meal—with a variety of appetizers.
