Ingredients for 4 servings:
- 4 bell peppers, 2 green, 1 red, 1 yellow, roughly diced
- 1 large onion(s), roughly diced
- 2 garlic cloves, crushed
- 4 tomatoes, roughly diced
- 200 g bacon, streaky, lean, diced
- 2 tbsp olive oil
- 2 tbsp paprika powder, sweet
- 2 bay leaves
- 1 liter vegetable broth
- 2 sausages (Mettwurst), sliced
- 250 g meat sausage or Lyoner, diced
- 1 can corn, small
- 1 tube(s) Tomato paste
- salt and pepper
- possibly spice mix (vegetable)
- 150 g rice, pre-cooked
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Hungarian stew
Fry the bacon in olive oil and sauté the onions and garlic. Add the paprika and sauté briefly. Add the bell peppers and tomatoes. Top up with the broth. Add the bay leaves and the Mettwurst sausages and simmer gently for 10 minutes. Then stir in the tomato paste. Season with salt, pepper, and a little Vegeta, if desired. Finally, heat the sausage, rice, and corn in the broth, but do not boil. Serve with white bread or Bauernstuten (farmer’s bread).
