Leek and apple fritters

Ingredients for 2 servings:

  • 1 stalk(s) leek
  • 1 garlic clove(s)
  • 40 g sunflower seeds
  • 30 g pumpkin seeds
  • 400 potatoes, mainly waxy
  • 1 apple, sour
  • 2 egg yolks
  • 2 tbsp flour
  • Salt
  • pepper
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim the leek, slice it lengthwise, wash it thoroughly, and cut it into thin rings. Pat the leek rings dry with a kitchen towel. Peel and finely dice the garlic. Roast the pumpkin seeds and sunflower seeds in a pan, then roughly chop them in a blender. Peel and grate the potatoes. Mix the grated potatoes with the pumpkin seeds and leek rings. Peel and core the apple. Coarsely grate the flesh and fold it into the mixture. Add the egg yolks, flour, 1 teaspoon of salt, and a little pepper, and mix everything well. Add plenty of oil to a hot pan and fry the fritters until crispy and brown. Drain on kitchen paper and serve. Serve with applesauce.
