Oatmeal patties

Ingredients for 6 servings:

  • 2 cup(s) rolled oats, wholegrain
  • 1 cup(s) vegetable broth, hot (freshly cooked or 1 cube dissolved)
  • 1 large carrot(s)
  • 1 large zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 eggs
  • 1 tsp mustard
  • 1 tsp paprika powder
  • ½ tsp marjoram, dried
  • ½ tsp thyme, dried
  • Parsley, fresh
  • Chives, fresh
  • pepper
  • Salt
  • possibly sunflower seeds
  • Oil, for frying

Place the oatmeal in a bowl and pour over the hot broth, mix well, and then let cool. In the meantime, grate the carrot and zucchini, finely dice the onion and garlic, and mix everything into the oatmeal. Add the eggs and mustard. Season generously with the herbs, paprika, pepper, and salt, if desired. Heat plenty of oil in a non-stick pan and fry the patties until crispy. Drain on a paper towel and serve with herb curd or tomato sauce. The grated vegetables give the patties a fibrous texture—almost like real meatballs. If you like the patties a bit more “bite,” you can stir in a handful of sunflower seeds.
