Ingredients for 1 servings:
- 5 eggs
- 500 g leek
- 3 small potatoes, boiled
- 1 bunch of parsley
- 1 small red bell pepper(s)
- 1 small green bell pepper(s)
- 1 carrot(s), grated
- 1 cup flour
- oil
- some margarine
- salt and pepper
- Paprika powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
First, beat the eggs with a whisk, then add the flour, salt, pepper, and paprika. Chop the vegetables with a mixer and add them. Dice the cooked potatoes and add them last. Brush a baking dish with margarine and spread about 1/4 cup of oil in the dish. Then pour the entire mixture into the baking dish. Bake at 225°C for about 20-30 minutes. It’s best to do a toothpick test to see if it’s cooked through. You can also adapt the recipe by adding other vegetables or sausages.
