Leek cheese soup

Ingredients for 8 servings:

  • 1 large onion(s)
  • 1 kg minced meat, mixed
  • 3 stalk(s) leeks (really thick ones, otherwise more thin ones)
  • 2 can mushrooms, sliced
  • 2 cups cream cheese spread
  • 1 cup processed cheese with herbs
  • 1 ½ liters vegetable broth
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the onion and sauté it in a large pot with a little fat. Add the minced meat and cook until thoroughly cooked. Meanwhile, wash the leek and cut it into half rings, then add it to the minced meat and pour in the broth. Simmer until the leek is soft. Season generously with salt and pepper, stir in the cheese, and add the mushrooms. I always serve it with baguette (sometimes with herb butter).
