Leek ragout Indian style

Ingredients for 4 servings:

  • 1 ½ kg leeks
  • 3 tbsp oil
  • 500 g pork
  • 2 tsp curry powder
  • Salt
  • garlic powder
  • ½ liter meat broth
  • 3 tsp cornstarch
  • 1 cup of cream
  • some lemon juice

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

with pork

Cut the trimmed and washed leek into approximately 4 cm long pieces, boil in salted water for 10 minutes, then drain. Meanwhile, dice the pork and brown it vigorously in oil. Season with curry powder, salt, and garlic powder, gradually adding the meat broth. Then add the leek and simmer for about 20 minutes. Whisk the cornstarch with the cream and stir into the ragout. Season to taste with lemon juice, curry powder, and salt. Serve with rice.
