Leek stew with minced meat balls

Ingredients for 4 servings:

  • 800 g potatoes
  • 1 kg leek
  • 1 tbsp oil
  • 300 g minced meat
  • ½ liter vegetable broth
  • 200 g processed cheese with herbs
  • some lemon juice
  • Salt and pepper from the mill
  • nutmeg
  • Paprika powder, sweet

Working time approx. 25 minutes; Total time approx. 25 minutes

very simple, but filling and delicious

Peel and dice the potatoes, and cook until soft. Trim, wash, and slice the leek into rings. Heat the oil in a pan and sauté the leek for 10 minutes. Roll the minced meat into balls and add to the leek. Dissolve the herb cheese in the hot broth and add to the leek. Season with salt, pepper, and a little paprika and nutmeg. Stir gently and simmer for 10 minutes. Add the diced potatoes and simmer for another 5 minutes. Adjust seasoning if desired and add a little lemon juice to taste. For those in a hurry: Frozen leeks also work well, but I prefer to chop them myself.
