Lemon almond muffins

Ingredients for 1 servings:

  • 150 g butter or margarine, soft
  • 90 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 3 m.-sized eggs
  • 110 g flour
  • 78 g almonds, ground
  • ½ tsp, leveled baking powder
  • 1 large lemon(s), zest and juice
  • 1 tbsp almond milk (almond drink) or regular milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

for a 12-cup muffin tray

Cream the butter or margarine until creamy. Gradually add the sugar, vanilla sugar, and salt and mix until smooth. Add the eggs one at a time and mix in. Mix the flour, ground almonds, baking powder, and lemon zest together and add to the batter. Add the milk and lemon juice and mix everything into a batter. Pour the batter into the 12 prepared muffin tins. Bake in a preheated oven at 190°C (top/bottom heat) or 170°C (fan oven) for about 25-30 minutes on the middle rack. Tip: If you’d like a topping, simply mix some powdered sugar with lemon juice and spread it on the cooled muffins.
