Ingredients for 1 servings:

  • Lemon balm, 2 pots of it
  • 500 g sugar, finest refined sugar

Instructions

Working time approx. 15 minutes; Rest period approx. 5 days; Total time approx. 5 days 15 minutes

Pluck the lemon balm leaves and chop them very finely. Mix with the sugar and let them dry thoroughly in a sunny windowsill for 10 days. Stir the mixture twice daily. When the window is open or drying outdoors, I place a baby diaper (gauze) over the container. This keeps insects away. After 10 days, I put everything in a food processor and finely chop it. The powder now dissolves instantly, even in cold drinks, and imparts a sweet lemon balm flavor to any dish.
