Ingredients for 1 servings:
- 150 g flour
- 160 g sugar
- 100 g butter, melted, cooled
- 5 eggs, separated
- 1 lemon(s), juice and grated peel
- 1 packet of baking powder
- 1 pinch(s) salt
- e.g. powdered sugar
- Fat, for the shape

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes
The most delicate temptation … since lemon cake was invented
Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks with the sugar until fluffy. Then add the butter, flour, baking powder, lemon juice, and zest and mix. Finally, carefully fold in the egg whites. Pour the batter into a greased loaf pan. Bake in an oven preheated to 180°C for approximately 35-40 minutes. After 20 minutes, cover the cake with aluminum foil to prevent the surface from burning. If you use a flatter and wider pan, the baking time will naturally vary. My pan is 25 cm long. Let the cake cool and dust with powdered sugar or glaze with powdered sugar and lemon juice.
