Lemon cake à la mother-in-law

Ingredients for 1 servings:

  • 6 eggs
  • 375 g sugar
  • 2 packets of vanilla sugar
  • 1 pinch(s) salt
  • 1 sachet of flavoring (grated lemon peel, Finesse)
  • 175 g potato flour
  • 175 g flour
  • ½ pack of baking powder
  • 375 g butter
  • 200 g dark chocolate coating

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 175°C. Beat the eggs and sugar until frothy. Stir in the salt, vanilla sugar, lemon zest, potato flour, flour, and baking powder. Gently heat and melt the butter, then stir it into the batter. Pour the batter into a greased springform pan and bake at 175°C for about 60 minutes. After baking, remove from the pan and let cool, then cover with melted chocolate coating.
