Ingredients for 1 servings:
- 4 tbsp desiccated coconut
- 250 ml milk
- 250 g flour
- 150 g brown sugar
- 2 tsp, leveled baking powder
- ¼ tsp baking soda
- 1 pinch of salt
- 2 eggs
- 120 ml vegetable oil
- 1 lemon(s), grated peel and juice
- 1 apple, cut into small cubes
- possibly powdered sugar
- possibly cake icing

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

This amount is enough for a 12-hole muffin tin. Add the coconut flakes to the milk and let them soak for about 10 minutes. Meanwhile, combine the flour, sugar, salt, baking powder, and baking soda in a bowl. In another bowl, combine the eggs, oil, lemon zest, juice, and milk with the desiccated coconut until smooth. Add the flour mixture to the egg mixture and mix with a ladle until all the dry ingredients are well moistened. Finally, fold in the diced apple. Spread everything into the muffin tin and bake at 160°C (convection oven) for about 20-25 minutes. Sprinkle with powdered sugar or drizzle with lemon icing.
