Lemon Curd Ice Cream

Ingredients for 1 servings:

  • 350 ml whole milk
  • 400 ml cream
  • 2 tbsp, leveled cornstarch
  • 150 g sugar
  • 2 tbsp glucose syrup
  • 40 g cream cheese
  • 200g lemon curd

Instructions

Working time approx. 10 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Recipe for the ice cream maker, makes 1 liter, super creamy

Mix the cornstarch with a splash of milk until smooth. Mix the cream cheese and lemon curd until smooth. Heat the remaining milk, cream, sugar, and glucose syrup in a saucepan on the stovetop and simmer gently until the sugar has completely dissolved. Now stir in the mixed cornstarch, bring to a boil, and simmer, stirring constantly with a whisk, until the mixture thickens. This should take about two minutes. Remove the pan from the heat and whisk in the cream cheese and lemon curd mixture. Chill the mixture either in the refrigerator or in an ice-water bath until cold. Then pour the mixture into the ice cream maker and let it do its work. The ice cream tastes delicious with fresh strawberries.
