Ingredients for 4 servings:
- 750 g quark
- 75 g sugar
- 2 lemon(s), juice and grated zest
- 6 sheets of gelatin
- 2 tbsp pistachios, finely chopped
- some sugar
- some chocolate shavings, wafer-thin

Mix the quark, sugar, lemon juice, and grated zest (reserve a little of each for garnish) thoroughly. Soak the gelatin in cold water, squeeze it out well, and dissolve it in a small bowl over a simmering water bath. Stir continuously and pour it into the quark mixture. Fill 4 glasses. Refrigerate for 12 hours or overnight. Mix the pistachios with a little sugar and the reserved lemon juice and zest, and divide them among the glasses. Garnish each with 1-2 chocolate chips.
