Lemon granita

Ingredients for 4 servings:

  • ½ cup sugar
  • 2 ½ cups water
  • 1 ¼ cup(s) lemon juice (equivalent to about 5 – 6 lemons)

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Refreshing, simple

Dissolve the sugar in the water on the stove and boil the syrup for five minutes. Then let it cool and stir in the lemon juice. Pour the finished mixture into a container, about three to five centimeters high, and freeze. After about an hour, the surface will begin to freeze. Crush the ice and mix well with the rest of the ice. Freeze again, and periodically crush the freshly formed ice again. The granita is ready when it has the texture of finely crushed ice. Serve it in chilled glasses. Alternatively, it can also be made in an ice cream maker, but this will give a finer texture.
