Apple sorbet

Ingredients for 4 servings:

  • 2 apples (Golden Delicious)
  • 100 g sugar
  • 50 ml water
  • 50 ml cider
  • 4 cl Calvados
  • 1 lemon(s)
  • 1 pinch(s) cinnamon, (optional)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Wonderfully light and wonderfully fresh

Peel the apples, cut them into small pieces, drizzle with lemon juice, and place them in the freezer (on a plate or board, etc.) in as large a space as possible. Boil the sugar, water, a little lemon juice, and cider until the sugar dissolves clearly. Chill the sugar syrup. Once the apple slices are frozen, place them in a bowl, add the sugar syrup and Calvados (and cinnamon if desired), and mash with a hand blender. (Not creamy! Small apple pieces are desired). Return the mixture to the freezer (about 30 minutes), then portion and serve. Wonderfully refreshing and, without cinnamon, the ideal accompaniment to a starter.
