Ingredients for 1 servings:
- 8 eggs
- 6 tbsp sugar
- 200 ml lemon juice, freshly squeezed is best
- 100 ml lime juice, also freshly squeezed and some lime zest
- 300 ml cream
- 300 g flour
- 1 pinch of salt
- 1 egg(s)
- 200 g butter
- 100 g sugar

Absolutely delicious and refreshing!
For the shortcrust pastry: Mix together the butter, sugar, egg, and salt. Add the flour and knead everything into a dough. Chill for 1 hour. Then roll out the dough and line a greased tart tin with it, pressing down the edges. Prick the dough several times with a fork, chill for another 30 minutes, and then bake in a preheated oven at 180°C (top/bottom heat) for 12 minutes. Remove from the oven. For the topping: Beat the sugar and eggs well in a bowl, then gradually stir in the cream, grated zest, and juices. The mixture should be nice and creamy. Pour the cream onto the pastry base and return the tin to the oven. Bake at 160°C for about 30 minutes; the filling should be firm around the edges but still soft in the center. Allow the tart to cool thoroughly until the filling is firm. Before serving, lightly sprinkle the tart with brown sugar and top with thinly sliced lime slices. Serves as a dessert for 8-12 people.
