Lemon muffins

Ingredients for 1 servings:

  • 200 g butter
  • 200 g sugar
  • 1 pinch of salt
  • 1 lemon(s), grated peel
  • 4 eggs
  • 200 g flour
  • 1 tsp baking powder
  • 2 lemons, juice
  • 50 g powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Beat the butter until peaks form. Stir in the sugar, salt, and lemon zest. Add the eggs and beat until light in color. Mix the flour and baking powder, sift in, and mix well. Place paper muffin cups in the muffin tin and fill them 2/3 full with batter. Bake in the lower half of an oven preheated to 180°C for about 30 minutes, until the tops of the muffins are light golden brown. Do the skewer test. Remove the muffins and let them cool slightly in the tin. For the syrup, mix the lemon juice with the powdered sugar. Use a knitting needle to pierce vertical holes in the still-warm muffins and brush the syrup over them in portions.
