Lemon parfait with yogurt

Ingredients for 4 servings:

  • 4 egg yolks
  • 100 g sugar
  • 100 g natural yogurt
  • 1 lemon(s), juice and some zest, finely grated
  • 250 g cream

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 5 minutes; Total time approx. 12 hours 25 minutes

Line a loaf pan with cling film or use a silicone mold. Small molds will also work. Whisk the cream until stiff peaks form. Place a large bowl of cold water next to the stove. Bring a sufficiently large pot of water to a boil and then heat the egg yolks in a stainless steel bowl or chocolate melting insert, stirring constantly with a whisk. Gradually add the sugar and continue stirring until foamy. Add the lemon zest and juice. Place the bowl with the egg yolk mixture in the bowl of cold water and continue stirring until the mixture has cooled. Stir the egg cream into the natural yogurt and fold in the cream. Immediately pour the parfait into the mold or molds and freeze. Ideally, do this overnight so the parfait can chill thoroughly. The parfait can be served with other ingredients or over chocolate sauce.
