Kiwi sorbet

Ingredients for 4 servings:

  • 4 kiwi(s), green
  • ¼ liter of wine, white or sparkling wine
  • 100 g sugar
  • 2 packets of vanilla sugar
  • 2 tbsp lemon juice
  • 1 kiwi(s), gold for decoration
  • mint

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Boil the wine and sugar until the sugar has dissolved. Peel the green kiwis, chop them up, and puree them. Mix with the wine, lemon juice, and vanilla sugar, and place in the freezer. Whisk vigorously every half hour for the next four hours until the puree is semi-frozen (or churn and freeze in an ice cream maker for half an hour). To serve, form the ice cream into balls, fill champagne glasses, and garnish with the golden kiwis and mint. Perfect as a light, refreshing summer dessert or as a small starter to a hearty meal.
