Ingredients for 4 servings:
- 1 kg potatoes, cooked, from the previous day
- 2 garlic cloves
- 1 lemon(s), organic
- e.g. salt and pepper
- 4 tbsp olive oil
- 1 bunch of flat-leaf parsley
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes
Wash and boil the boiled potatoes thoroughly; this can be done the day before. Then halve the cold boiled potatoes and season with salt and pepper. Now cut the organic lemon into small pieces and add them to the potatoes along with the crushed garlic. Pour over the olive oil, mix well, and transfer to an ovenproof dish. Bake in the oven at 220°C for 15 to 20 minutes. Serve with chopped flat-leaf parsley.
