Lemon sauce

Ingredients for 4 servings:

  • 40 g butter
  • 1 tbsp flour
  • Nutmeg, grated, n. B.
  • ½ lemon(s)
  • 250 ml meat broth or vegetable broth
  • Sugar
  • Salt
  • 1 egg yolk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Lightly sauté 1 tablespoon of flour in 40g of butter along with a little grated nutmeg and the grated zest of half a lemon. Add 250ml of stock and the juice of half a lemon, and season with sugar and a pinch of salt. Strain through a fine sieve and blend the slightly cooled sauce with an egg yolk.
