Ingredients for 4 servings:
- 200 g flour
- 70 g sugar
- 1 egg yolk
- 2 tbsp milk
- 1 pinch of salt
- 100 g butter
- 6 eggs
- 250 g sugar
- 200 ml cream
- 1 lemon(s), untreated, juice and zest
- 2 lemons, juice
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Mix butter, egg yolks, and salt. Add the flour and knead into a smooth dough. Chill for a while. Grease a tart pan. Line it with the dough and pull up the edges. Prick the pan several times with a fork. Pre-bake at 200°C (top/bottom heat) for about 10 minutes, then reduce the temperature to 160°C. Remove the cake from the oven. Then mix together 6 eggs, 250g sugar, lemon zest, and lemon juice. Stir in the cream. Pour over the baked base. Bake at 160°C for about 45 minutes.
