Lemon Tofu

Ingredients for 4 servings:

  • 400g tofu
  • 2 lemons
  • 400 g sweet cream
  • 1 tbsp lemon pepper
  • 4 tbsp soy sauce or teriyaki marinade
  • 1 tbsp vegetable broth, granulated
  • 1 tsp salt
  • 1 tbsp olive oil for frying

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the tofu, mix with the lemon pepper (I use a ready-made spice blend made from various peppercorns, including Sichuan peppercorns), the soy sauce, or the teriyaki marinade, and let it sit for about 30 minutes. Drain if desired and briefly sear in olive oil. Zest the lemons with a zester, or peel the lemons and finely slice the zest. Squeeze out the juice. Deglaze the tofu with the lemon juice. Then add the cream, vegetable stock, and salt, and simmer for about 10 minutes over low heat. Finally, add the lemon zest. I like to serve this with brown rice and salad.
