Lemon yogurt muffins

Ingredients for 12 servings:

  • 1 lemon(s), untreated
  • 250 g flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 1 egg(s)
  • 150 g sugar
  • 60 ml oil, neutral
  • 150 g natural yogurt
  • 100 ml milk
  • 125 g powdered sugar
  • 2 tbsp lemon juice
  • Grease or paper baking cups

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat oven to 200°C. Grease muffin cups or use paper baking cups. Grate the lemon zest and squeeze the juice. Sift flour and baking powder into a bowl, then mix with baking soda, salt, and lemon zest. In a mixing bowl, whisk the egg with sugar, oil, yogurt, milk, and lemon juice. Fold in the flour mixture and fill the batter into muffin cups. Place the muffins in the oven and bake for 20-25 minutes, until they are nicely risen and golden brown. Let cool for a few minutes and remove from the pan. Mix the powdered sugar with the lemon juice until smooth and spread on the muffins.
