Ingredients for 4 servings:
- 12 m.-sized eggs
- 2 tbsp, heaped sugar
- 50 ml orange lemonade
- 50 ml tangerine juice
- 1 bottle of lemon flavor
- 20 g butter
- 8 tbsp mandarin oranges (mandarin orange wedges from the can)
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Drain the mandarins in a sieve, reserving the juice. Separate the eggs. Beat the egg whites with 1/2 a bottle of lemon flavoring until stiff peaks form. Beat the egg yolks with the sugar and the remaining lemon flavoring until frothy. Add the mandarin juice and orange soda and continue beating until a noticeable foam forms; this will happen quickly due to the carbonation in the soda. Now fold in the egg whites. Heat a pan with a little butter. Reduce the heat by half and pour in the batter. Cover and cook for about 3 minutes until golden brown, then turn over and cook for another 2 minutes. Repeat this process until all the batter is used up. Place the finished omelet on a flat plate, drape about 2-3 tablespoons of mandarin oranges on half and fold the other half over the top. Plate and serve.
