Lemony nectarine jam

Ingredients for 1 servings:

  • 900 g nectarine(s), white flesh, pitted and roughly diced
  • 200 ml lemon juice
  • 1 lemon(s), zest
  • 1 pack of gelling sugar 2:1, 500 g each

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 3 minutes; Total time approx. 1 hour 48 minutes

This is a not so sweet version.

Combine nectarines, lemon juice, lemon zest, and gelling sugar. Let the mixture stand for about 1 hour to release its juice, then bring to a boil and simmer for 3 minutes. Test the setting time and pour the jam into prepared jars. This jam can also be made with peaches.
