Lentil soup

Ingredients for 6 servings:

  • 2 tsp oil
  • 1 large onion(s)
  • 200 g lentils
  • 1,500 ml vegetable broth
  • 600 g potatoes
  • 100 ml cream
  • 2 small carrots
  • 1 bunch of spring onions
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

delicious, vegetarian version

Finely chop the onions, fry in oil, add the lentils, and stir. Add the vegetable stock, bring to a boil, and simmer over low heat until the lentils are semi-soft (this takes about 20-30 minutes). Peel the potatoes and carrots, trim the spring onions, chop everything, and add to the soup. Simmer until soft. Pour in the cream and season with salt and pepper.
