Lentil soup mother's style

Ingredients for 6 servings:

  • 350 g lentils
  • 500 g pork ribs
  • 2 liters of water
  • 500 g potatoes
  • 1 bunch of soup vegetables
  • Salt
  • 1 clove(s) garlic or garlic salt
  • 1 tsp thyme
  • 1 bunch parsley, chopped
  • 3 sausages, Mettenden (or dried soaked plums)
  • some vinegar
  • possibly plum(s), dried, soaked

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the lentils and soak them in the water for 12-24 hours. (Plain lentils do not need to be soaked). Bring the lentils and pork ribs to a boil in the soaking water, cook until almost tender. Peel, wash, and dice the potatoes. Trim and finely chop the soup vegetables. When the lentils and ribs are almost tender, add all the ingredients, including the mettenden sausage (or soaked plums, if you like), and season with salt, thyme, and garlic (salt). Cook until tender. Finally, remove the meat from the bone and add it to the soup in small pieces. Add a little vinegar to the soup. Sprinkle the soup with parsley to serve. If you like, you can serve the soup with vinegar and sugar, or add soaked plums to the soup with the potatoes.
