Light chicory cream

Ingredients for 4 servings:

  • 500 g chicory
  • 1 small onion(s)
  • 20 g butter
  • 1 tbsp Flour (level)
  • 7 ½ dl vegetable broth
  • 1 dl milk
  • ½ cup cream (single cream)
  • Spice(s), of your choice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cut out the hard, bottom part of the chicory in a wedge shape, then slice it. Dice the onion. Gently heat the butter in a pan. Sauté the chicory and diced onion, stirring occasionally, while dusting with flour. Stir in the broth and milk and simmer gently for 15 minutes. Blend the soup in the pan with a hand blender. Stir in the cream and season to taste.
