Light leek and minced meat casserole

Ingredients for 2 servings:

  • 60 g pasta
  • 2 stalk(s) leeks
  • 1 garlic clove(s)
  • 100 g processed cheese, with herbs
  • 200 ml vegetable stock
  • 100 ml low-fat milk
  • 2 tsp vegetable oil
  • 250 g minced beef
  • 2 tsp parsley, chopped
  • 1 tsp paprika powder
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

A delicious pasta casserole with few calories

Pre-cook the pasta in salted water for about six minutes. Wash the leek and slice into rings. Crush the garlic. Melt the cheese spread in a mixture of broth and milk and season with salt, pepper, and paprika. Preheat the oven to 200°C (180°C fan-assisted oven). Heat the oil in a pan. Fry the minced beef with the garlic and leek rings until crumbly. Drain the pasta and place it in a casserole dish along with the minced beef, leek rings, and sauce. Season again with salt and pepper and bake on the middle rack of the oven for about 30 minutes. Sprinkle the leek and minced meat casserole with parsley and serve hot. One serving has 11 ProPoints.
