Light seltzer cake with fruit

Ingredients for 8 servings:

  • 3 cups flour
  • 2 cups sugar
  • 1 cup(s) oil (e.g. sunflower oil or rapeseed oil – depending on your taste)
  • ½ cup mineral water (sparkling seltzer)
  • ½ cup milk
  • 4 eggs
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 400 g fruit, to taste
  • 200 g butter
  • 200 g sugar
  • 350 g flour
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 45 minutes

Combine all ingredients, from flour to baking powder, in a bowl, stir, and place on a greased baking sheet. Drain the fruit if necessary (if using frozen or canned fruit); otherwise, chop it up and spread it on the dough. Then, combine the butter, sugar, flour, and a pinch of salt into crumbles and sprinkle them on the dough. Bake at 200°C (400°F) for about 25-30 minutes (use a toothpick to check if it’s dry). Let cool.
