Ingredients for 12 servings:

  • 4 eggs, of which the egg whites
  • 4 eggs, including the yolk
  • 100 g sugar, fine
  • 80 g flour
  • 80 g starch flour

Beat the egg whites until stiff, then add the sugar and beat until the sugar has dissolved. Stir in the egg yolks, then sift the flour mixed with the starch and fold it in with a whisk. Spread into the baking tin and bake at 200°C for approx. 20-25 minutes. This recipe is enough for one cake or, if baked on a baking sheet, for a sponge roll. For a fruit cake, half the recipe is sufficient; after baking, leave it in the tin to cool and then top it with a filling. Once the glaze has cooled, you can remove the cake from the tin and decorate it. Instead of the starch, you can also use a packet of pudding powder (vanilla or chocolate), but then use 100g of flour instead of 80g. You can also replace some of the flour with 50g of ground almonds or hazelnuts.
