Lightning-fast vegetable pan with couscous and meatballs

Ingredients for 2 servings:

  • 80 g couscous, instant
  • 1 tbsp olive oil
  • 250 g sausages, thin, raw
  • 1 zucchini, sliced
  • 150 g cherry tomatoes
  • ½ yellow bell pepper, diced
  • 1 garlic clove(s), squeezed
  • salt and pepper
  • chili powder
  • some clarified butter, for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Pour 150 ml of boiling water over the couscous, add 1 tablespoon of olive oil and salt. Set the couscous aside and let it swell. In the meantime, remove the sausages from their skins and roll them into small meatballs. Fry them in hot clarified butter for 4-5 minutes. Add the chopped vegetables and seasonings to the meatballs and sauté everything over medium heat for another 4-5 minutes. Then add the loosened couscous and mix everything thoroughly. Season to taste.
