Ingredients for 1 servings:

  • 500 ml white wine
  • 5 g pasta, thin
  • 3 tbsp lilac flower heads
  • 1 piece(s) lime peel

with homemade vinegar

Pour the wine into a container with a wide mouth, ideal for holding 1 liter of liquid. Add the uncooked pasta. Loosely seal the container with paper or several layers of cheesecloth to allow air to enter, but not dust or insects. Let the container stand in a warm place until the wine begins to smell of vinegar. This will take 1 to 3 months, depending on the room temperature. Filter the finished vinegar. Add the lilac blossoms, except for the green parts, and the lime peel to the vinegar. Let the blossoms and lime peel soak in the vinegar for 1 week. Filter the vinegar and use it for delicate salads.
