Ingredients for 1 servings:
- 300 ml lime juice (juice from about 6-7 organic limes)
- 180 g sugar
- 110 ml plant milk (plant drink), e.g. oat, almond or soy milk
- 50 g vegan butter
- 30 g cornstarch
- 2 tbsp lime zest

Wash the organic limes and zest the green zest to produce 2 tablespoons of lime zest (if you prefer a more intense lemon flavor, you can use all the zest from all the limes). Make sure to zest only the green part of the zest and avoid the white pith underneath. Then juice the limes. Combine the sugar and cornstarch in a saucepan until there are no lumps. The amount of cornstarch depends on how thick you want the curd to be: 30g cornstarch creates a smooth texture, while 35g cornstarch creates a firm texture. Add the plant-based milk and stir until it thickens slightly and forms a smooth paste. Then add the lime juice and zest and mix well again. Heat the mixture over medium heat, stirring constantly, until it begins to simmer. Reduce the heat and continue to simmer the curd for 8 minutes, stirring regularly. Remove the pan from the heat and stir in the vegan butter. Strain the mixture through a fine sieve to collect the lime zest. Pour the lime curd into glasses and let it cool before refrigerating.
