Ingredients for 2 servings:
- 5 large limes, juicy, untreated (juice and grated zest)
- 115 g butter, diced
- 300 g sugar, fine
- 4 medium-sized eggs, lightly beaten

Sweet lime spread
Place the lime juice, zest, butter, and sugar in a heatproof bowl over a pan of simmering water; the bottom of the bowl should not be touching the water. Heat the lime mixture slowly, stirring constantly, until the sugar has dissolved and the butter has melted. Add the eggs through a sieve and continue stirring over low heat for 30-40 minutes, until the mixture has thickened considerably. Stir occasionally at first, then more frequently, and continuously towards the end, so that the fruit paste cooks evenly and does not curdle. Ensure that the water in the pan remains just below boiling point. Pour the finished paste into preheated, prepared jars, close tightly, and store in a cool, dry, and dark place or in the refrigerator.
