Ingredients for 1 servings:

  • 10 limes, organic
  • 1 kg gelling sugar 1:1
  • 200 ml lime juice

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 55 minutes

Wash the 10 organic limes. Then zest at least 5 of them. Peel all of the limes, preferably with a knife, so that all the white pith is removed, leaving only the core. Quarter the limes and remove any remaining white pith. Place the grated zest and the limes in a saucepan and fill with the lime juice. Add the same amount of gelling sugar at a 1:1 ratio. Let stand for a while, then puree everything with a hand blender and cook according to the instructions on the gelling sugar packet. Now pour the jam into clean jars. This yields about 5 medium-sized jars. The jam is reminiscent of a Caiphirinha!
