Ingredients for 4 servings:

  • 500 g flour (pasta flour)
  • 4 eggs
  • 1 tbsp olive oil
  • 6 limes, grated zest, juice for another purpose
  • 1 tsp salt
  • Water, as needed

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 4 minutes; Total time approx. 2 hours 19 minutes

Fresh noodles with a light lime flavor

Put the flour in a bowl. Now add the eggs, olive oil, lime zest, and salt and mix everything well; this is best done by hand. Add water a teaspoon at a time until you have a firm, elastic dough. If it sticks, flour your hands frequently while kneading until the dough no longer sticks. Wrap the dough in cling film and let it rest in the refrigerator for at least 2 hours. Then use a pasta machine to make tagliatelle pasta and cook it al dente in plenty of boiling salted water (15 g of salt to 1 liter of water) for 3-4 minutes. Drain the pasta and serve. Lime pasta goes very well with light fish dishes with sauce.
