Delicious spinach spaetzle

Ingredients for 4 servings:

  • 150 g spinach
  • 3 eggs
  • 125 ml water
  • 400 g flour
  • Salt
  • nutmeg
  • 40 g butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

a green delight

Puree washed spinach with eggs and water, salt, and nutmeg. Stir in flour and let stand for 10 minutes. In the meantime, boil plenty of salted water, place the spaetzle dough in a food mill or spaetzle grater, and scrape it into the boiling water. When the spaetzle rise to the surface, they’re done. Remove with a slotted spoon and drain in a colander or sieve. Swirl the pan with butter and add the spaetzle. Done!
