Ingredients for 4 servings:

  • 1 kg potatoes (Amarilla), yellow
  • 0.3 cl olive oil
  • 2 limes or lemons, the juice
  • salt, pepper
  • 2 onions, medium
  • 1 chili pepper(s) or Aji amarillo
  • 2 limes or lemons, the juice
  • Parsley, finely chopped
  • Coriander leaves, finely chopped
  • salt and pepper
  • e.g. salad
  • n. B. Egg(s), hard-boiled
  • n. B. Olives, black

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Boil the potatoes in their skins in salted water, peel them, and mash them. Now let the mashed potatoes cool. Season to taste with salt, pepper, lemon juice, and oil. Form into balls and flatten them like burgers. For the salsa, finely slice the onion and add the lemon/lime juice. Dice or slice the chili or aji, add the finely chopped parsley and/or cilantro, and a little oil. Mix everything together and pour over the flattened potato balls. Now, you’ll want to decorate the whole thing (but it’s not necessary). Place lettuce leaves on the plate, a few quartered hard-boiled eggs, and a few black olives around the edges. You can serve this as an appetizer, or serve it with tuna, for example, and eat it as a “light” evening meal.
