Ingredients for 2 servings:
- 6 large lemons, untreated
- 1 liter of alcohol (90 – 95%)
- 450 g sugar
- 1,250 g water

Italian schnapps
Peel the lemons thinly with a vegetable peeler to ensure no white remains on the skins. Place them in a sealable jar with the alcohol. Seal and place in the sun for about 5-10 days. The alcohol will turn golden yellow with sufficient sunlight. Now, bring 1250g of water to a boil. Add 450g of sugar to the boiling water to dissolve. Once the sugar-water mixture has cooled, combine the filtered alcohol (coffee filter) with the mixture and bottle. Wait about 1 week; store in the freezer.
