Linguine with braised tomatoes

Ingredients for 2 servings:

  • 1 clove(s) garlic
  • 4 tbsp olive oil
  • 400 g cherry tomatoes
  • 2 stalks of basil
  • 200 g pasta (linguine)
  • Parmesan, freshly sliced
  • Salt and pepper, colored, from the mill
  • 1 pinch(s) of sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the garlic and slice thinly. Heat 2 tablespoons of olive oil in a pan over medium heat and add the garlic and tomatoes. Season with salt, pepper, and sugar and simmer over low heat for 20 minutes. Stir the tomatoes occasionally and lightly crush them 5 minutes before the end of the cooking time. Pick the leaves from the basil. Cook the linguine in plenty of salted water until al dente, drain, reserving 100 ml of the pasta water. Mix the pasta with the braised tomatoes and pasta water, seasoning with salt and pepper if desired. Drizzle with 2 tablespoons of olive oil and serve sprinkled with shaved Parmesan and basil.
